It's grilling season and that means cooking health friendly meals while out in the nice weather. In order to reduce the fat and calories in your grilled food, however, you need to be armed with the right kind of grilling recipes such as this beer-barbecued chicken. It is absolutely delicious, moist, and tender while putting a spin on the traditional beer can chicken recipe that is so popular during the summer.
While most chicken recipes on a grill say that you should keep the skin after serving it, this recipe says to take it off once when you're done cooking. But don't worry, the actual meat of the chicken will still retain all of the spices, herbs, and other flavorings. This chicken can also be paired with grilled vegetables for a light summer meal.
Here are all the ingredients you will need. This will create six servings altogether.
- One tablespoon smoked paprika
- Two teaspoons dried oregano
- 1 1/2 teaspoons of salt
- One teaspoon dark brown sugar, packed
- One teaspoon ground cumin
- 1/2 teaspoons of onion powder
- 1/2 teaspoons of garlic powder
- 1/2 teaspoons of ground chipotle
- 1/2 teaspoons of ground pepper
- One chicken, 4-pounds
- 1 12-ounce bottle beer in preferably American lager or pale ale
And here are the instructions. Entire cook time is about over an hour.
- Preheat the grill to 400F.
- Now, combine together the paprika, oregano, brown sugar, salt, onion powder, cumin, chipotle chile, and ground peppers into a small bowl.
- Loosen the skin on the chicken around the thighs and breast so that the spices can be rubbed underneath. Also rub the mixture inside the cavity and prepare the chicken for grilling.
- Place drip pan underneath the grill and place chicken side down. Start pouring the beer until halfway into the cavity and let the excess be caught in the drip pan.
- Close the grill lid and let it cook for approximately 45 minutes.
- Now move the chicken breast side up and pour the rest of the beer into the cavity. Continue roasting until the meat is at 165F or around another 45 minutes.
