Low Carb Sugared Cranberry Vodka Fizz

Hey Friends-welcome back! It's the holidays and that means there will be celebrations with family and friends coming up in the next few weeks. As a low carb lifestyle follower, it can be tricky to find a cocktail I can enjoy. Mixed drinks are just too carb laden for my low carb life. And truth be told, I really don't even have a drink that often. But if I were to want a little something, it would be during this season. I created a drink that I can enjoy and not throw off my no sugar policy and I wanted to share it with you today. It's my Low Carb Sugared Cranberry Vodka Fizz.

Serves 4

Sugared Cranberries

1 Cup Fresh Cranberries

1 Tbsp Stevia Glycerite

3 Tbsp Granular Erythritol

Simple Cranberry Syrup

1/2 Cup Fresh Cranberries

1/8 cup Powdered Erythritol

1/8 cup water

Cocktail

1/2 Cup Simple Cranberry Syrup

4 oz Vodka

2 cans Sugar Free Ginger Ale (chilled)

Granular Erythritol for sugared rim, Sugared Cranberries, Orange Peel and Rosemary for Garnish

To make this cocktail start by sugaring the fresh cranberries. Add a cup of cranberries to a bowl and add a tablespoon of the Stevia Glycerite. The Stevia glycerite is a sticky syrup so it will make the sugar stick to the cranberries. Add 3 tablespoons of the erythritol (I used the granular type for this so it would look like real sugar) And mix with a spoon or spatula until all the cranberries are coated. Set aside.

To make the Simple Cranberry Syrup. Add 1 cup fresh cranberries, 1/4 cup erythritol (I used the powdered type for this but you could use the granular type as well.) and 1/4 cup water to a small sauce pan over medium heat. Bring to a boil and cook, stirring often, until the cranberries burst and you get a syrup like consistency. About 8-10 min. Remove from heat and allow to cool to room temperature. You can make this ahead of time and refrigerate too. Just give it a stir when ready to use.

To sugar the glass rims, dip rim of glass into a small amount of water, no-sugar ginger ale or use a slice of orange after you get the zest for the garnish. Put some of the granular erythritol on a plate and swirl the rim of each glass through the sugar so it sticks to the rim.

To make the cocktail. Fill a cocktail shaker with ice and add about 1/2 cup of the simple cranberry syrup to the shaker. Add 4 oz vodka to shaker, replace lid and give it a good shake to throughly mix the syrup and vodka. Pour contents into 4 martini glasses. You may need to use one of the bar strainers while pouring to remove any berry bits that get through the top of the shaker. Top each drink with no sugar ginger ale. Garnish with sugared cranberries, orange peel and rosemary.

If you don't follow a low carb lifestyle you can easily make this cocktail by just replacing the erythritol with an equal amount of sugar. But give it a try the low carb way, you'll love it! Enjoy!
