Low Carb Cinnamon Sugar Almond BrittleMakes 12 servings
Ingredients8 tbsp butter (1 stick)
2 cups Swerve, preferably Confectioners
1/4 cup Cinnamon (I like mine with lots of cinnamon so you can adjust this to your taste)
Pink Himalayan Salt (optional)
4 cups Almonds (you could use any type of nut for this recipe)
Melt stick of butter in a heavy saucepan or skillet over medium heat. Add Swerve and cinnamon and mix to combine. Add 4 cups of almonds and stir to combine with the butter, cinnamon and sugar. Continue to stir until all the almonds are coated and are just beginning to turn golden. About 8-10 min.
Line a cookie sheet with parchment paper. When your almonds are done roasting spread them out on your parchment lined cookie sheet to cool. If you are using the Pink Himalayan Salt, sprinkle it on the almonds now before they cool so that it sticks. When your almond brittle cools, break it apart into pieces to package into individual bags to gift.
