Coconut breakfast porridge. I ate this for breakfast every.single.day. last week… it’s heavenly. Don’t be afraid of mixing coconut oil into your oats! I also subbed frozen mango for banana, and it reminded me of a delicious Thai dessert. Both this recipe and the one above are from two new-to-me blogs that have been a great source of recipe inspiration to me lately… and both involve the name “Ella”!
These sunshine-y breakfast cookies, sent to me by Lisa herself! The gluten-free version is filled with wholesome ingredients like dark chocolate, cranberries, almonds, and sesame, and really hit the spot. (Although I will be the first to admit, I ate all three of them after midnight! I think this guy got eaten somewhere in Williamsburg after a night at the movies… see the beautiful New York scaffolding?) These will be great for on-the-go snacks, and lucky for me, I’ve already spotted them at our local health food store.

Wedding dress shopping! My mom and I went to our first appointment a few days ago, and have two more scheduled for this week. We’ve been remarkably relaxed about it, which is an overall tone we’re hoping to maintain throughout this lovely journey. I will say, though, that there are so many little (and not-so-little) things to think about, like tents, permits, stationers, photographers… my oh my!
ICED COFFEE WEATHER! It’s 61˚ here today, and although it may snow tomorrow, Brien and I took a nice walk after yoga. It was too beautiful out to stick to my rule of one cup of joe a day. Come on, Spring!
This book. I started it yesterday and am only 1/4 of the way through, but I already don’t want it to end. Wonderful writing, and a beautiful story.
