Lemon Pepper Cod

This is a great lunch. It’s filling, which is a big plus for me. I need a filling lunch to keep me from mindless snacking all afternoon. Plus, the recipe is super simple.

Lemon Pepper Cod

  • 1 Cod filet
  • lemon pepper seasoning
  • 2 tsp extra virgin olive oil
  • garlic powder

Heat the extra virgin olive oil in a pan. While heating cover the cod filet on one side with the lemon pepper and garlic. Place the filet in the hot oil and let cook for about 2 minutes, flip and cover the cooked side with lemon pepper and garlic. Let cook another 2 minutes and continue flipping until cooked thoroughly.

I had my cod with a HUGE serving of green beans cooked in a little soy sauce and topped with cracked pepper.

With it I enjoyed some green tea. The hot tea really made the lunch. I was sort of surprised how well the tea went with it.
