Lark Rum Cask Finish is the second whisky I’ve had from this little distillery in Tasmania – the first one being the Lark Single Cask which was… ok. Which is also how I felt about this one as you can see from the score above.

“Lark Rum Cask Finish is their famous Tasmanian single malt Whisky, but after its initial aging they toss it into those Rum casks for a bit longer to squeeze out some flavor. The result is wonderful. The Rum casks mellow the Whisky even more and add a salted-caramel flavor that really matches up nicely, making the spirit richer and yummier.”
Ya know… I might not a fan of Lark whisky in general. They’re a fairly young distillery (opened in 1992) and have a limited distribution footprint so I’ve had little of what they put out. So who knows, they might have something not available in the USA that would knock my socks off. Anyways, let’s dig into the details and get on with the Lark Rum Cask Finish review.

NOSE
Malty rum; brown sugar, cinnamon, dried apples, butterscotch, spice and a touch of oak.
PALATE
Malty rum; brown sugar, cinnamon, raisins, dried apples, butterscotch, clove and a touch of oak.
FINISH
Medium fade of malt, oily spice and dried fruit.
BALANCE, BODY & FEEL
Not fully balanced, medium body and a weak thin feel.
OVERALL
Lark Rum Cask Finish is an overly sweet whisky that comes across like the combination of a young rum and a mild single malt. The sweetness is almost cloying but stops just shy; it’s not something that will wow you, but it’s definitely unique. There’s an odd elegance to this whisky and I enjoyed the experience for what it was, but it’s not something I would go out and source a bottle of anytime soon.
