I’m not a big fan of drinking “moonshine”, but I needed to pick up a couple of white whiskeys for the Infinity Barrel Project and when I saw the label, and proof, of the Kalifornia Distilleries Corn Whiskey I knew it had to be in my white dog mix. It wasn’t the prettiest new make at the ball, but it did pack the 3rd biggest punch.
The distillery does make an aged bourbon out of the same 4x distilled mash, which I’m now incredibly interested in trying. Not because I think it will be great, but out of pure morbid curiosity. Not curious enough to buy a bottle mind you, but if I come across it in a bar like Mohawk Bend that specializes in CA made products you can bet I’ll be swinging back a shot and posting it on Instagram.
Kalifornia Distilleries Corn Whiskey Review: Details and Tasting Notes
In Kalifornia Distilleries’ Words: Kalifornia Distilleries Corn Whiskey
Kalifornia Moonshine is hand-crafted from 100% estate-grown corn and barley then distilled at least four times in an old school reflux still – in the same authentic tradition that moonshine has been made for hundreds of years. At 100 proof, this all-natural, proprietary recipe is charcoal-filtered for the highest purity, quality and taste. A truly versatile spirit, it can be enjoyed neat, on the rocks and in a wide range of mixed cocktails.

Kalifornia Distilleries Corn Whiskey Review: OVERALL
Well, it’s raw distillate alright. Kalifornia Distilleries Corn Whiskey is nothing special, if you’ve had any of the dozens of moonshines that have shown up in the market over the last couple years then you’ve had something that tastes somewhat like this. Some are worse, some are better, but one thing sticks out like a sore thumb on all of them… none of them are as good as what the big guys make.
Raw distillate from Wild Turkey, George Dickel, Jim Beam, Buffalo Trace and High West all stand out above all the raw spirit I’ve had from the craft guys. That raw spirit is a big indicator of what you’re going to get out of the whiskey end-result. That’s where the true talent of the distiller shines through; what goes into the barrel, not just what comes out of it.
