This morning, after doing a quick recipe search, I tweeted this:

because I thought I could either make curried egg salad or I could use some pesto sauce (that I assumed) I had in the cupboard.

Instead, when I got home I found this was what I thought was pesto sauce…

So I decided I’d make eggplant garlic tuna sandwiches.

I mixed 1 TBSP Eggplant Garlic Spread with 1 can tuna. I put it on a slice of toasted sprouted grain bread with a handful baby romaine leaves and topped it with another slice of toasted bread.

It was really tasty, a little bland though. Next time I’ll add some cracked black pepper and maybe a pinch salt.

With my sandwich I made a quick little salad by combining a few handfuls bagged romaine salad and a handful broccoli slaw. I drizzled some of this holy-deliciousness on top.

I’ve heard endless praises of this dressing all over the blog-o-sphere. Everyone LOVES it. When I was at the store a week or so ago I picked up a bottle after seeing it had no dairy in it. I figured I’d better try it, if it’s supposed to be so tasty.

I cleaned a few grapes.

And voila…

Healthy Guideline Checks

  • 1 serving fruit
  • lots and lots of veggies
  • swapped simple carbs for complex ones (sprouted grain bread = protein!!)

No sugar, except for fruit… but the way I see it, that’s free.

The rest of the day…

Today is about to get 9 ways of crazy. Holy Toledo.

  • I’m working ‘til 3pm.
  • Then I’m heading straight over to start babysitting. 3:15-1am.

We’re probably going to go to the pool if it stays warm, and their parent’s gave me money to take them out to dinner so… it should be a really fun night. But I don’t have a spare 11 minutes to get a mile or fitness in.

Such a bummer. I’m totally sad. Ohh well… I’m going to be moving around like crazy all afternoon so I’ll get a little fitness in.

I threw a few things in my purse for my 3:30 hunger pangs.
