How to Make Carb-less Huevos Rancheros

On phase 1 of the South Beach Diet breakfasts are hard for me. I don’t know, stuffing my meals and snacks with veggies is pretty easy, but breakfasts not so much. So I end up eating eggs… eggs about a billion and four ways.

This morning I had the brilliant idea for Huevos Rancheros after finding a frozen bag of meatless meatballs. Strange… I know.

It was so tasty!

First spread about 1/3 cup vegetarian refried beans over the bottom of a plate. Then heat them in the microwave for a minute or two.

Now heat 3-6 meatless meatballs in the microwave until hot (mine take a bout a minute). Once hot mash them with a fork and stir together with taco seasoning and crushed cayenne pepper.

Fry two eggs with salt and pepper. I use a little onion powder too. Leave the yolks runny.

While the eggs fry break up a slice of cheese, I used pepper jack and melt it in the microwave over the meatless meatballs and beans.

Once melted top the beans, meatballs and cheese with the egg and pour a generous helping of salsa over the top.

I think this will definitely be a go-to breakfast for the next week.

School

So school has been a little overwhelming. It’s a big reason why I haven’t been blogging. I have tons of reading due for every class and I’m at the beginning of writing two 20 page papers. I’m stressed already. I can’t even think about how crazy I’ll be in a few weeks.

On a really awesome note, I just ordered a new computer to help me get my papers done!

See, I do everything on a little netbook and I do love it for it’s mini cuteness, but it is a little slow. Plus the screen size makes writing long papers really hard. I was trying to do research on an online database that uses Adobe Reader and it was taking over a minute to open simple document pdf files. Hopefully my new laptop will be here soon. I’m shooting for Friday.
