How To Make A Hot and Spicy Shrimp and Citrus Veggie Mix

Almost 11 years ago, I promised to improve my cooking skills. Just like any other promise, it was meant to be broken. I did try but I feel cooking is all about talent and that thing I don’t have much. Skills can be learned and when practiced, it can be perfect. But since cooking isn’t a skill so there’s no way I can perfect it. Well, that was my thoughts before. I guess I was just making up excuses to justify myself.

I proved myself wrong because once you really want to achieve something, there are no limits in pursuing it. I don’t consider myself to be a good cook still. That I admit but at least I’m way better than I am 11 years ago. I learned to experiment on dishes and some turned out to be good enough to be served on the table while others ended up in trash bins. Cooking is my inferiority complex. In most occasion, where i have to chip in my food share for a gathering, I’d rather order one from a resto or ask a trusted friend to do it for me.

I always had this fear that people wont like what I’ve prepared and they will just eat it out of respect. That, I know would hurt me so much. But things changed. I realized, if I will forever use this fear then I will also be forever trapped in a world where I know, I could have improve myself only if I tried enough. So, that’s the beginning of my kitchen journey. I don’t care if it taste good, I know I can better it in time.

Today, is one of those days where I feel my cooking skills has gone rocket-high. It was one of the sumptuous dish I have ever made. So, I thought of sharing it with you. I don’t know what it is called because I just made it myself.

To make this flavorful dish, you need the following:

Ingredients:

1/2 kg large prawns (remove head)
1 medium onion (sliced)
5 heads garlic
dash of peppercorn (slightly crushed)
ginger
2 green/red bell pepper (sliced)
1 large carrot
Valencia Orange, sliced (any will do)
oyster sauce
1 tsp. tomato ketchup
1/2 cup water (optional)
seasoning
1 tbsp. corn oil
chili paste/ raw chili ( optional)

Preparation:

- Sauté garlic, onion and ginger one after the other until slightly brown.
- Add prawns, tomato ketchup and season with peppercorn. Cover for 5 minutes.
- Add sliced orange and oyster sauce. Mix. Cover for another 5 minutes.
- You can add water if you don’t want it to be dry.
- Add veggies and season according to your taste.
- Add chili paste or raw chili for additional kick.
- Remove from heat.
- Serve hot.
(This will make 2-3 servings)
Voila! This is what I got! A hot and spicy shrimp and citrus veggie mix.
