Just heard this from someone who knows some inside information about the sushi business....
The price is rising for the Japanese food products that the restaurants are getting from which is a japanese manufacturing company. The cases of the good eel that you were eating in the past got expensive for restaurants to order. So the owners/ managers decided to order a case of eel that was at the cheaper price (the rubbery eel). After using one packet of eel, their sushi chefs should discover that they are difficult to cut down even with the sharpest blades. They would complain to their managers. The manager you spoke with should be well aware that you had an legitimate reason to complain about the quality of the eel especially when you were a regular to his establishment.
I rest my case. I feel vindicated.
