Homemade Chicken Pancake Nuggets

So, we had left over chicken breast from our roast chicken dinner from the night before. I decided to use it to make variation of chicken nuggets for bubba's lunch today. Here's what I used:
Quarter of a cooked chicken (breast part only, use a knife to mince it)
2 tablespoon of mayonnaise
2 tablespoon of bread crumbs
1 tablespoon of multipurpose flour
1 egg
Broccoli (only the leafy part, just use a scissors to cut it off)
A sprinkle of mozzarella cheese
A dash of olive oil
Mix everything into a bowl until texture is dough-y, I used a fork to mash everything together. Because my little poppet was still having her brekkie, I put the "dough" into the fridge for an hour before baking it in the oven.
Put in the oven  at 200C for about 15 minutes then 180C for about 10 minutes or until skin turns golden brown.
Take out and let it sit for a while. Serve on it's own or with a dip.
To be honest, I'm not a big fan of the texture (like salted pancake) but somehow my daughter loves it. And I'm not complaining because all the ingredients are healthy and bub gets to have her veggies and meat and eggs in one dish! Yay!
