Hoisin Glazed Cod and Roasted Veggies.

But before I made that, I was crazy hungry this afternoon. That’s what detoxing does to you.

Anyways, I was in major need of fruit so I took 2 very ripe gala apples and made Microwave Baked Apples. I got my 2 servings of fruit and what tasted like pie filling all at once.

Later I dipped a spoon in the sunflower seed butter… no, I’m not ashamed!

Hoisin Glazed Cod

This recipe is super duper easy. Plus it would be good on any fish or chicken. Put any veggie you have in the fridge with it. Voila, dinner is served.

Ingredients for 1-2 servings

  • 2 pieces of cod
  • 1.5 TBSP hoisin sauce
  • 1 TBSP evoo
  • salt
  • pepper
  • veggies you have or want
    • I did mushrooms
    • green beans
  • 1/3 cup whole wheat couscous

Directions

Heat the oven to broil. Thaw the cod fillets.

Put the cod fillets in a foil lined pan. Mix the hoisin sauce with 1 tsp water and pour over the cod fillets. Toss the veggies with the evoo, salt and pepper. Spread the veggies around the cod fillets in the pan. Pop in the oven and broil for about 8 minutes, or until the fish is opaque.

While the fish cooks cook the couscous like the package suggests.

Plate everything together and enjoy!

Detoxing off sugar is always such a bummer. I feel awful for the first week, sometimes two. It starts with a day or so of really intense hunger (no matter what) then it turns into feeling really lethargic. My workouts are probably going to be pretty toned down for the next week. I might even cut my long run on Saturday from 7 miles to 3-4.
