Herby Blue Cheese Orzo 1 FAF

I am not a huge pasta or rice lover, but orzo pasta is one of my favorite side dishes. Orzo is basically small rice shaped pasta. It’s like having the best of both pasta and rice. And it’s super fast to cook. I love to make it with a little bit of blue cheese and fresh herbs. Then top it up with sweet barbecued bell pepper slices and succulent barbecued chicken. Yum! If you are not a fan of dragging that barbie out, you can also roast the bell peppers in the oven with a drizzle of olive oil and herbs. That’s as tasty as they would be straight from the barbecue. Super-duper easy and fast. And simply delish!

Herby Blue Cheese Orzo 2 FAF

Herby Blue Cheese Orzo
Served with Barbecued Chicken and Bell Peppers

Serves: 2
Preparation time: 15 minutes

Ingredients:
100 gr uncooked Orzo Pasta
1/8 cup Chopped Chives
1/8 cup Chopped Basil
1/8 cup Chopped Parsley
1/8 cup Chopped Cilantro
50 gr Blue Cheese
1 lime (optional)
Serve with 3 sliced and barbecued bell peppers and 2 barbecued chicken breasts

Directions:
Chop the herbs. Set aside. In a medium saucepan bring water to boil. Add the orzo pasta. Boil around 5 minutes or until the orzo has just softened (is al dente). Drain the water. Add the blue cheese and mix until it has completely melted. Add the chopped herbs. Mix well. Divide the Herby Blue Cheese Orzo between two plates. Top up with barbecued bell pepper slices and sliced barbecued chicken breast. Squeeze the juice of 1/2 lime on top of each dish.
