Hearty BBQ Chicken & Rice Casserole

Recently I stocked up on Baked Beans with a BOGO sale at Publix.  We usually only buy the small cans, but for this particular sale, it was for the large.  I had used part of the can the other night for dinner, so to finish it off, I came up with this recipe.  It was very easy & you can actually put your own spin on it! I know I will be changing it up next time!
Hearty BBQ Chicken & Rice Casserole
Ingredients
  • 1 (28 oz.) can of Baked Beans.
  • 2 cups of rice (I used Whole Grain Brown Rice).
  • 1 cup corn (I used frozen).
  • 1 lb. meat of choice (I used ground chicken, but I think I may try sausage next time).
  • 1 cup of Bisquick (I will be using cornbread next time, but I didn’t have any).
  • 1/2 cup milk (I used skim).
  • 1 egg.

Directions

  1. Preheat oven to 400 degrees.
  2. Brown & drain meat.
  3. Prepare corn.
  4. Boil rice.
  5. Combine meat, baked beans, corn & rice in a casserole dish.

6.  Combine Bisquick, milk & egg in a bowl until blended. Pour over chicken mixture.

7. Bake for 30 minutes.

8. Serve & enjoy! :)

Obviously feel free to change it up! I’ve been married for almost 4 years & I still have my culinary training wheels on.

I would much rather eat out or bake!
