This is my go-to salad when I just can't be bothered at the end of a long day. Healthy and delicious, which is what we are all about right?

Ingredients: 

8 baby potatoes or 3 large potatoes
A couple of hand fulls of mixed salad greens
1 bunch of asparagus (there are usually 10 or 12 in a bunch)
1 red pepper (capsicum)
3 tomatoes
1 red onion
1 packet of smoked salmon
Drizzle of olive oil
Tsp of paprika
Salt and fresh black pepper
Flat leaf parsley (optional)
Balsamic glaze (or any dressing you want)
Amounts don't need to be perfect. This is one of those throw together meals.

Directions:

Preheat oven to 180 degrees C. Give the potatoes a little scrub, then cut them into bite-sized pieces and place in baking dish. Drizzle over a bit of oil, and sprinkle paprika, salt and pepper. Mix through and make sure the potatoes are covered in the seasoning. Cook in oven for about 40 minutes or until cooked through, crunchy and chip-like. When the potatoes are about 20 minutes from being done, I place the asparagus over the potatoes and cook it this way so that it doesn't get drowned in oil or the life cooked out of it in the pan. I like it a little crunchy. 
Cut up the red onion into fine slices and cook on a low-medium heat, with a bit of olive oil, for about 20 minutes. The slower and longer you you cook the onions, the more flavoursome they will be. 
In a bowl mix the lettuce, some fresh chopped parsley, the cut up tomato and red pepper (capsicum). Drizzle over the balsamic glaze and combine. 
Let the potatoes cool a little, then dish them up on a plate and top with the salad mix. Add the pieces of smoked salmon to the top and sprinkle over the onions and a dash of cracked pepper. Add another swirl of balsamic glaze and serve.
