
Life is not fair.
The sooner you understand that, the easier life would be. As much as I would love to write that life is fair it is not.
It’s not fair that I have to wake up every morning, empty the dishwasher, make breakfast, change my kids diapers, get them dressed, feed them breakfast, do Dora’s “we did it dance” (my daughters just love dora) and then get dressed and drive through traffic, go to work and try to survive the next 8 hours of “office life”.
I realize that although life is not fair I am blessed on so many levels.

I am blessed because I have kids while there are so many people struggling with infertility.
I am blessed because I have a job while there are so many people who are unemployed, with no income and no way to pay their bills.
I am blessed because I can do Dora’s we did song.
I am blessed because I wake up every morning. Healthy, and up to face another day. With all that said, I am just not a morning person. I am a thankful person, but not a morning one. However, there are certain things that make life easier. For me, this things would be good food. Lastly, I am blessed because I have these muffins in my life. They help make mornings easier.

These muffins are not only easy to prepare, they are also healthy: low in fat and sugar, plus they are loaded with fruits (apples) and nuts (almonds). Feel free to swap the almonds for any other nuts you might prefer (walnuts taste great with apples). I usually enjoy them with a cup of earl gray tea, while my daughter sips on her orange juice along with these. She is usually not a huge fan of nuts so the thinly sliced slivered almonds pass her taste buds test.

Prep Time: 15 minutes
Cook Time: 25 minutes
Yield: 12 Large muffins
Ingredients
- 2 cups (230g) all purpose flour
- 3 tsp baking powder
- 1/2 tsp salt
- 2 tsp ground cinnamon
- 1/2 tsp ginger powder
- 1/2 tsp freshly grated nutmeg
- 1 egg
- 1/2 cup (100g) white sugar
- 1/4 cup (50g) butter, melted and cooled
- 2 tbsp vegetable oil
- 1 cup (225g) plain unsweetened yogurt
- 2 cups (250g) apples, chopped into cubes
- 1 cup (110g) silvered almonds
- *For the topping
- 2 tbps borwn sugar
- 1 tsp ground cinnamon
Steps
- Preheat oven to 180C / 350 F / Gas mark 4. Line a standard muffin pan with muffin papers liners.
- In a large bowl, sift the flour, baking powder, salt, cinnamon, ginger, and nutmeg. Set aside.
- In another large bowl, combine the egg, yogurt, butter and oil. Gradually add the dry ingredients. Mix until all the flour is used. Fold in the apples, then the almonds. Scoop the batter into the prepared muffin papers.
- Prepare the topping. Just mix the sugar and cinnamon together, and then sprinkle over the muffins.
- Bake in a preheated oven for 20 to 25 minutes.
- Cool on a wire rack for 10 minutes before removing from the muffin pan. Store in an airtight container, or wrap in cling film before freezing.

You know what else would make my mornings easier? A nanny… Dressed as Dora… Doing the “We did it” dance…
Well a mom can dream… Meanwhile, these muffins will do.
