Health Hungry's Hearty Oatmeal PancakesI made a tasty "farewell to carbs" Easter breakfast this morning!  P.S. That is DECAF coffee you see there... go me!  This little numbers were so hearty and satisfying - try them soon!
Health Hungry's Hearty Oatmeal PancakesHealth Hungry's Hearty Oatmeal Pancakes:(modified from Whole Foods recipe)
  • 1 1/2 cups oats
  • 2 eggs
  • 3/4 cup applesauce(I used a chunky cinnamon flavored one - so good!)
  • 2 Tbsp almond milk(or milk of your choice)
  • 3 Tbsp Peanut Butter
  • 3 Tbsp Maple Syrup
  • Berries of your choice
  • Banana
Directions: Pulse oats in a food processor until you have an oat flour consistency.  Whisk in eggs, applesauce, milk, peanut butter, maple syrup.  Heat pan or griddle to medium heat, melt a tsp of EarthBalance before pouring a healthy quarter cup of batter in the pan.  Cook until you see the edges turning brown and bubbles breaking around the sides(3 min or so) flip, and cook 1 to 2 minutes more.  Keep warm in oven.  Serve with fresh sliced berries and bananas, and a drizzle of maple syrup.  YUM!(Makes 8 pancakes)
