Oh my gosh! I’m a hungry, hungry, beast today!
Let’s be real, I ran 6 miles on Sunday then I ran another 10k on the 4th. That makes for hungry, hungry, beasts.
First lunch
I went by work at 11am and my Dad gave me the rest of the day off!! But only after I went to lunch with him. Love Dad’s.
We went to Erik’s Deli and each had Pilgrim’s Progress’. Mine was without the secret goo. I also had a cup of veggie veggie soup.
Doesn’t this sandwich look HUGE and filling?!
Well… it wasn’t. I was the same hungry 10 minutes after eating it as I was before we ate.
Second Lunch
I just needed some food. I was tired of feeling hungry.
I’m not too jazzed about how many ingredients were on the nutrition label. Not to mention all the preservatives but… oh well.
At least I’m not hungry anymore.
Fitness
My plan is to do an elliptical workout tonight. And I was totally feeling it until I ran 100ft between our offices earlier this morning. My legs went from feeling awesome to heavy and tired. Maybe if they feel good later tonight I’ll go by the gym… maybe they need a rest day?
The 4th of July and the Easy Cajun Turkey Burgers Recipe
Since my birthday is right next door to the 4th of July, all the celebrations on the 4th end up being extenuations of my birthday.
Max and I started off the day bright and early with a 10k race in Spreckels.
I had a little pre-race hot magic lemon water since my stomach was a little jumpy and sad from my cheesecake and caesar salad indulgences.
The race was awesome. I wish I would have taken my camera. We ran through a grove of maple trees, literally through lettuce, broccoli and strawberry fields. So so so so cool!
And the best part. After the race we were given huge bags of produce.
Tanamura & Antle sponsored the race (and are literally from Salinas, like that’s one of their fields I’m standing in) so they provided all the racers with a bunch of artisan lettuces, romaine hearts, broccoli, red onion, and cauliflower. So much loot!
After the race were were HUNGRY! We ran 1 minute faster splits than our normal pace so were were definitely on empty.
We hit up Black Bear Diner on the way home.
Water and coffee ASAP, please!!!
I ordered the large link sausage breakfast which was 3 link sausages, 2 fried eggs, country potatoes and 2 slices of toast. I topped everything with hot sauce.
I bummed my toast off on Max. He really really really wanted it.
Definitely hit the spot.
After breakfast we showered and went to the store to get our 4th of July BBQ stuffs.
I did the food prepping, Max did the BBQing, my family did the eating.
We snacked on pop chips and beer while cooking.
Homemade {Easy} Cajun Turkey Burgers
Max and I found this recipe on Food Network.
It makes 5 big burgers and takes 10 minutes to cook, probably 20 minutes to prep.
Here’s what ya need:
- 1 1/4 pounds lean ground turkey
- 1/2 green bell pepper (diced)
- 1/2 small red onion (diced)
- 4 strips of bacon, we used low sodium (diced)
- 1 tsp Cajun seasoning
- 1/2 tsp hot sauce
- 1/2 tsp salt
- 1/2 tsp black pepper
- 5 sweet onion rolls
- romaine lettuce
- tomato
- Ranch Mayo
- mayo (we used dairy free)
- 1 packet ranch dip mix
- vinegar
Here’s what ya do:
Combine turkey, green bell pepper, red onion, bacon, Cajun seasoning, hot sauce, salt, and pepper in a bowl. Use your hands and combine everything. Form into 5 burgers. Heat on the grill for about 10 minutes, until they are fully cooked.
Slice tomato, onion, and lettuce for topping burgers. We toasted the onion rolls on the grill for a little extra crunch.
To make Ranch Mayo, I put about a 1/2 cup dairy free mayo into a bowl, I sprinkled some of the ranch mix into the bowl and stirred until I liked how it tasted. Add a little white vinegar to taste. This gives it a little tang.
We had ours with pop chips and some American pale ale.
These are so good. We’re definitely making them again. Max loved that they were a little spicy. And he hates ranch dressing but liked the ranch flavored mayo. Definitely try it.
