Grilled Chicken Caesar Salad For Lunch

When you are preparing chicken on the grill for dinner, cook an extra pound and a half. Rub a light coat of olive oil and season to taste. I like a little spice so I sprinkle cayenne pepper on the chicken while it cooks. Make sure the chicken is fully cooked with no pink in the middle.

Let the extra 1 1/2 pounds of chicken cool down while the family eats. When dinner is done it is time to prepare your lunch for the entire week. You are saving time and money preparing your lunch while you are cooking dinner for the family.

Weigh out 4 ounces of chicken and cut it into chunks. Put it in a freezer bag. Repeat this with the rest of the chicken. Place the chicken in the freezer.

You will need ten cups of romaine lettuce. Wash and chop or tear the lettuce, pack 2 cups of lettuce in 5 ziplock bags or 5 Tupperware containers. In five small Tupperware containers add two tablespoons of low-fat Caesar salad dressing and 1/8 cup of Parmesan cheese. Put the romaine lettuce and dressing in the refrigerator. There you have it. Lunch prepared for the week.

Before you go to bed take out one bag of grilled chicken and put it in the refrigerator next to one container of romaine lettuce and one container of salad dressing. You can even pack this in a lunch bag so when you are rushing to work you can just grab and go. A healthy lunch made easy, loaded with over 30g of protein and under 400 calories.
