Greek Style Mac & Cheese
It is no surprise I love mac & cheese. First of all, anything involving pasta I am automatically a fan of. The creamy sauce and crunchy topping that mac & cheese offers makes it such a delicious, stick to your ribs meal. Let's not forget how versatile it is! You can add almost any cheese and ingredients to make it delicious! This mac & cheese includes all typical Greek flavors melded into a mac & cheese for the ages.
This delicious mac & cheese has feta, spinach, Greek yogurt and sun dried tomatoes. Even if you don't like mac & cheese make this as just a simple pasta dish with olive oil. Feta is a great cheese to use in mac & cheese. This was the first time I have ever used it. I usually constantly season my dishes, but with this dish, hold off salting until you have all of the flavors together. The feta and parmesan add a good amount of salt. The last thing we all need is a salty mac & cheese. How did I forget to mention I made this into a fairly healthy version of mac & cheese. I used whole wheat pasta, Greek yogurt, spinach and almond milk. Can't really go wrong. For portion control ( yes I could eat the whole recipe) I used individual ramekins for serving. If not for portion control they are also super cute.
