Greek Style Mac & Cheese
It is no surprise I love mac & cheese. First of all, anything involving pasta I am automatically a fan of. The creamy sauce and crunchy topping that mac & cheese offers makes it such a delicious, stick to your ribs meal. Let's not forget how versatile it is! You can add almost any cheese and ingredients to make it delicious!This mac & cheese includes all typical Greek flavors melded into a mac & cheese for the ages.
This delicious mac & cheese has feta, spinach, Greek yogurt and sun dried tomatoes. Even if you don't like mac & cheese make this as just a simple pasta dish with olive oil. Feta is a great cheese to use in mac & cheese. This was the first time I have ever used it. I usually constantly season my dishes, but with this dish, hold off salting until you have all of the flavors together. The feta and parmesan add a good amount of salt. The last thing we all need is a salty mac & cheese. How did I forget to mention I made this into a fairly healthy version of mac & cheese. I used whole wheat pasta, Greek yogurt,spinach and almond milk. Can't really go wrong. For portion control ( yes I could eat the whole recipe) I used individual ramekins for serving. If not for portion control they are also super cute.

Greek Style Mac & Cheese





Ingredients:
2 cups elbow macaroni, fusilli, or cavatappi pasta
2 Tbsp butter2 Tbsp flour2 cups almond milk1 cup feta cheese1/4 cup low fat shredded mozzarella4 tablespoons parmesan1/4 cup Greek yogurt4 handfulls baby spinach2 cloves of garlic chopped1/4 cup chopped sun dried tomatoes1/2 cup panko bread crumbs1/4 cup grated ParmesanPepper to taste

Directions:1. Cook the pasta according to package instructions until just al dente. Drain and reserve the pasta. While pasta is boiling saute chopped garlic, tomatoes and spinach. Set aside.
2. Meanwhile, melt the butter in a saucepan over medium heat. Sprinkle in the flour and cook for 1 minute, stirring constantly. Gradually whisk in the milk and cook, stirring frequently, until thickened, 5 minutes. Add the feta and mozzarella, and stir until melted. Cut the heat, add the yogurt ,spinach, tomatoes and cooked pasta, and toss.
3. Heat the broiler. Pour the mac & cheese mixture into an 8" square baking dish or 4 individual ramekins. Top with bread crumbs and Parmesan, and season with black pepper. Broil until the bread crumbs are golden brown, about 5 minutes.
