Gianna’s Graham Cracker Toffee

Hey guys! I have a GREAT recipe for you this Sunday. I know I forgot to post a Sweet Friday Treat this week so I’m bringing it to you today. Last week I was babysitting some pretty awesome kids. Gianna was set on baking this recipe and I was much obliged. I’ll do anything to get a little sticky (and messy) in the kitchen. And she was nice enough to share the recipe with all of you.

I really like this toffee recipe because it’s super easy! It’s also pretty healthy for toffee, you use graham crackers as the base and the toffee mixture is really good on everything. We used some Nilla wafers as a base too and they were delicious.

Gianna’s Graham Cracker Toffee

Ingredients

  • 1 cup butter
  • 1/2 cup granulated sugar
  • 11/2 cup brown sugar
  • pinch of salt
  • 1 1/4 cups semisweet chocolate chips
  • 1 cup milk chocolate chips
  • 1 1/2 packages of graham crackers
  • 1 cup broken pecans

Directions

Preheat oven to 350 degrees. Line a cookie sheet with foil and then spray it with non stick cooking spray. Cover the pan with a singe layer of graham crackers (we broke ours into the half squares). Only make one layer. Sprinkle the pecans over the crackers.

Combine the butter, sugars and salt in a saucepan. Bring to a rolling boil, stirring constantly, until the butter is absorbed and the mixture becomes smooth and thick. We used a wire whisk. Spoon the cooked syrup over the crackers evenly.

Bake at 350 degrees for 10-12 minutes, until the topping is bubbly. Immediately sprinkle with chocolate chips. Let stand 2 minutes, use a knife and marble the chocolate over the top with a knife.

Let the pan cool and peel the foil off the toffee, break into separated pieces, and serve.

**Note. We covered the crackers with the toffee and sprinkled the pecans and chips on top of that. Then we baked. They turned out delicious and the chocolate was all melty.

I love how easy it was. Cooking sugar can be really stressful but this recipe is foolproof!

I think this recipe would be good topped on just about anything. We did graham crackers and vanilla wafers. I think saltines would be good and any other shortbread type cookie. Get creative!

Gianna says walnuts and almonds are also good on top.
