Did I mention before how fond Little A is of pasta and noodles? The moment I ask him what he would like to eat for lunch or dinner, his immediate response will contain either of the two. And do you have any idea why the cravings don’t seem to vanish even after years of being pregnant? While I was expecting Little A I never had a single craving in the nine months that I was carrying him and that in itself would upset me when I’d hear other pregnant ladies complain of their yearnings to have a particular food. To let you in a secret, I was privately little jealous of all those ladies because don’t you think troubling husbands while you are expecting is a right of every woman? Last week had such a day when out of a sudden my hungry appetite started craving for pasta though I had cooked for lunch and was all set. I asked Little A what he’d like to have and his reply was just as usual but this time he even added that he’ll love to have capsicum too since the last time we were at our play date at Sparky’s, the lady in an Italian food joint didn’t take our order correctly. She just forgot to add capsicums to our pasta and apologised in an old fashioned way. After I told him I may even add sausages, corn and spinach he couldn’t wait for lunch time to arrive.
This recipe of pasta is inspired from the cream pasta I regularly make in my kitchen because cooking up white sauce with flour and milk intimidate me to no end. I only cook white sauce when I don’t have other alternatives of substituting it with something else. And also slightly influenced by Nigella Lawson’s recipe of Penne in spinach sauce. Since I had all the ingredients in my fridge lying to be picked up, I started preparing for Spinach Pasta immediately. Little A loved the color of the sauce and enjoyed his meal. While I am writing this post I am also thinking of cooking up this recipe for dinner today with some fresh garlic breads. How does that sound?
Creamy Spinach Pasta

Ingredients :
- 2 cups - Fusilli (or any pasta you prefer)
- Spinach Leaves – 1 bunch
- Fresh Cream – 1 cup
- Cream Cheese – 1/4 cup
- Chicken Sausages – 100 gms, sliced
- Onions – 1, thinly sliced
- Red Capsicum – 1, thinly sliced
- Baby Corn – 4 nos, chopped
- Garlic – 2 pods, chopped
- Olive Oil – 1 tbsp.
- Oregano – 1 tsp
- Ground Black Pepper – 1 tsp
- Salt – to taste
Method :
Boil water in heavy bottomed pan and season it with salt and olive oil. Add in pasta and cook till al dente. Drain the water and keep it aside after washing it slightly in cold water so that they don’t stick to each other. Boil spinach in 2 cups of water till it is soft, for about 4-5 mins on medium heat. In a blender grind spinach, fresh cream and cream cheese. In a pan heat olive oil and saute garlic, onions, capsicum and baby corn. Throw in sausages and cook for 5-7 mins on medium heat stirring occasionally. When the sausages are cooked add in spinach cream sauce and let it simmer till the sauce starts to thicken. Sprinkle oregano and black pepper powder. Gently add in cooked pasta and serve immediately.
