Including millets in our day to day to food is a healthy option.I try to use them in what all ways I can and the most easy way is to make south Indian style breakfast like idli,dosa,pongal,puttu,etc.I have quite some collection of millets recipes in blog ,if willing check it out.You can also cook these millets as we cook rice and have along with some spicy gravy.

Make dosa is quite easy as on need not worry about the ratio of dal & rice but for idli the ratio has to be correct else you may not get soft fluffy idlis.Here I used equal proportion of rice and millet and dal one-fourth from which I got soft idlis.I didn't use grinder her for grinding just used my mixer, so go ahead and try this a day and serve healthy food for your family.

fermentation time; 6-8 hrs or over night

  • Thinnai/ foxtail millet- 1 cup
  • Idli rice/par boiled rice-1 cup
  • urad dal- 1\2 cup
  • methi seeds- 1\4 tsp
  • salt

1.Clean rice, millet and dal.soak rice + millet & dal + methi seeds together in water for around 2 hours.

2.First grind dal+ methi to a fine paste with little water.Transfer it to a container.

3.Then grind rice + millet in the mixer,transfer to the same container.Add salt and mix it well.

4.Leave it to ferment.When fermented the batter would have raised up well.Mix it well with a long ladle.

5.Grease the idli pan ,pour the batter and steam it.

Serve hot with your favoriteor sambhar. or both.
