Foodie Friday!

I love pancakes just a little too much. So naturally it makes sense I am constantly searching for healthier recipes of my favorite food. Lady's and Gent's I give you, Pumpkin Buckwheat Pancakes! They truly taste like pumpkin. Not super sweet. Instead of syrup I topped mine off with a light amount of Apricot Jam and oh my. I'm ready for a long day of slingin makeup!

What You Need1 cup of Buckwheat Pancake Mix1 cup of cold water1/3 cup of canned pumpkin1/3 tsp cinnamon1/4 tsp ground ginger

Set heat to medium and in a medium or large pan spray a non-stick cooking spray. Mix ingredients until blended but still lumpy. Scoop 1/4 cup of mix onto the pan. Cook pancakes on each side for two minutes and top off with whatever tickles your fancy. 

Oh, and how could you forget your delicious Cartel coffee in your mustache mug?? Two of my most favorite things.
