I saw this peanut butter on katheats awhile back and it sounded amazing but sadly we don't have Trader Joe's in Colorado. So when I went to Seattle and had the chance to visit a TJ's - I knew I was going to be hunting down their honey roasted peanuts. I brought a few bags back home with mr and got the chance to whip up a batch of peanut butter today. This was the first time I had made nut butter and I was amazed at how easy it was - it will definitely be a repeat project! However, I used my mini prep since I don't own a food processor and discovered its limits - this required extended run time which the mini prep apparently is NOT designed for. Pretty sure I burned out the motor. :( So now I guess I need a food processor for future nut butter batches, and a new mini prep since I loved mine. oh well....live and learn I guess.
The good news is that things were pretty much done before the motor went out, and the peanut butter lived up to the hype - it's amazing! I cleaned out the bowl and can't wait to eat more tomorrow.
