Dinner at the Speed of Light

Hey guys. I completely forgot that I’m house sitting for a friend and I have to get over and hang out with their little dog Ace so this is going to have to be a quick post.

This afternoon when I went over to let Ace out I realized they have an elliptical machine so I decided to take 115% advantage and did my cross training.

I did 30 minutes with a level 4 resistance at between 70-75 rpm. It was awesome and my legs were super happy to be doing something new.

For lunch we had Mexican. I had my usual shrimp tostada with chips and salsa. I really need to think about cutting myself off from chips. I have zero will power when it comes to these. Grr.

And after my workout I recreated my super good snack from last night; apple slices and Justin’s almond butter.

I love how working out in the afternoon keeps my motivation up for eating healthy. Total score!!

For dinner I whipped up a turkey sandwich with mixed baby greens and brown spicy mustard on Rudi’s GF whole grain bread with a side of chipotle flavored sweet potato fries.

Holy yum! These were frozen fries but they taste totally fresh once heated up in the oven for ~20 minutes. This whole meal came together while I showered and in exactly 7 minutes after. Wheew.
