Diet Recipe for Weight Loss: Black Bean Chili

When the seasons start to change and the air gets a little colder it's always a good time to try out new chili recipes. Of course this particular black bean chili is perfect all year round! If you're looking to stay on your diet without having to sacrifice so much on taste, then you need to try out this recipe. All of the ingredients are good for you, hardy, and there won't be any need to cheat on your diet.

This black bean chili is healthy for you because instead of heavy carbohydrates you will get a blend of heart healthy and vegan friendly vegetables like yellow onion, bell peppers, and tomatoes. Also, this recipe calls for tantalizing wheat berries.

Diet Recipe for Weight Loss: Black Bean Chili
Here is a list of ingredients. This recipe will make six servings.

  • Two tablespoons of extra virgin olive oil
  • One yellow onion, large and chopped
  • Five cloves of minced garlic
  • Two teaspoons of chili powder
  • One and a half teaspoons of ground cumin
  • One teaspoon of oregano, dried
  • One half teaspoon of salt
  • One half teaspoon of ground pepper
  • Two 15-ounce cans of black beans
  • Two 14-ounce cans of minced tomatoes
  • One or two canned chipotle peppers in adobo sauce
  • Two cups of vegetable broth
  • Two teaspoons light brown sugar
  • Two cups of wheat berries, cooked
  • The juice of one lime
  • One avocado, diced
  • One half cilantro, chopped

And here are the preparation instructions:

First, heat some oil in a Dutch oven in medium heat. Then, you will want to add the onion, bell pepper, chili powder, garlic, cumin, oregano, salt and pepper together. Allow to cook, stir occasionally, until most of the contents are tender. 

Next, add the beans, tomatoes, broth, brown sugar and dashes of chipotle for taste. Bring to broil over high heat then reduce the heat and cover, allowing everything to simmer for 25 minutes.

Now, stir while adding in wheat berries and heat for another five minutes. Removing from the heat, add the lemon juice for extra zest and use the avocado and cilantro as garnish.
