Day # 10 B.M.'s

Today has been a good day.  I woke up feeling rested, for the first time in a while... likely my day of relaxation yesterday helped!  My back is not 100%, but it's about 90% back to normal.  I really enjoyed yoga today(as always) if you live in the area, you must try a class from Balanced Bodyworks.  It's the highlight of my day!  After yoga I ran to the grocery store, and headed home for a quick breakfast before taking Meatball for his interview at doggie daycare!  He passed with flying colors and of course was running around like he was king of the world within minutes; when I am teaching all day - I will utilize doggie daycare for him.

So, I told you I would discuss the good, the bad, and the ugly... so let's talk poop.  I have been a fairly constipated girl for as long as I can remember.  There have been times when I was really jealous of people who could poop every day... I often would consider my "regular" every two days.(This is not healthy)  Clinically speaking, you are constipated if you have less than two bowel movements per day.  So, according to that definition, I have been constipated all my life.  Not on this detox!!!  I am happy(like to the point of bragging) to report that I am pooping an average of four times per day.  That's right, four times...  I love it - no forcing, or straining, no cramping "I gotta go now" moments, just good smooth, regular movements.  For those of you who struggle with this, you know why this change is such a big deal!
My boyfriend on the other hand... has not been so lucky.  He generally has some "gotta go now issues" but on our current plan, things have slowed down a bit for him.  I am trying to figure out what it might be, part of me thinks his system is grateful to just have a rest - and it's actually slowed down to normal.  But this is just proof that every body is different.  The tables have turned in our house, that's for sure.  To be continued...
So now that we have completed 10 days, we are discussing which food we are looking to slowly reintroduce and the winner is....... Wheat!  We are both enjoying the meat free, dairy free, results right now - but feel a little restricted without wheat, so we will reintroduce it by having one serving per day, as we desire.  But not today... we are having a yummy supper I threw together(well, I haven't tasted it yet but is smells amazing...)
 Health Hungry's Vegan Mexi-Bake
12 small corn-tortilla rounds1 can of refried beans1 small onion, diced3 cloves garlic, diced1 green pepper, diced2 cups of salsa1 cup of brown rice3/4 cup broth2 zuchini, cubed3/4 package daiya(vegan) cheddar "cheese"
Layer 6 corn tortillas on the bottom of glass baking dish. In a pan, saute onion, garlic, zucchini, green pepper.(add spices for Mexican flavor - cumin, chili pepper, etc.) Add 1 cup of salsa and spread over tortillas in dish.  Add rice and broth, then layer 6 tortillas over that.  Spread beans and remaining salsa, then sprinkle with cheese and cover with tinfoil.  Bake at 350degrees for about 1 hour.
