As promised, these are the truffle/bliss balls that I made, inspired from the recipe card from the last post here. Personally not a huge fan of cooking, just haven't reached the age where cooking is "enjoyable", but this ones super easy to make and only requires a few ingredients :)
Date Truffles What you'll need:
  1. Dates! (medjool dates)
  2. Nut or nuts of your choice
  3. Coconut flakes/cocoa powder/outer coating of your choice
  4. Optional ingredients: vanilla essence, almond spread 
  5. Food processor!

Method:
  1. Remove the pit from 10 dates, and slice dates in half.  It's preferable to get medjool dates as these ones have more "meat" and have a creamier texture, making it blend together better (not an eyeshadow review btw)
  2. Add dates into food processor, with about a cup of cashews, 2tbs cocoa powder, and a dash of vanilla essence
  3. Keep blending everything together until gradually the mixture clumps together like a ball of dough. 
  4. Add more nuts/cocoa powder if you feel as though the mixture is still really sticky or add more dates if the mixture isn't holding together.
  5. Start rolling out the mixture into balls
  6. Roll it in desiccated coconut flakes (I preblended my coconut flakes because they were a bit too chunky for my liking)
  7. Let it sit in fridge for a few hours for it to harden.

Date Truffles Aaaaand we are done! Eyeballing ingredients are definitely the way to go, just because we all have different taste and preferences. Almost all the ingredients are able to be switched into something else, except of the dates of course :P Instead of the coconut outer layer, something you could try if you prefer chocolate, is to put them on toothpicks and dip them in melted chocolate so it'll be kinda like cake pops if you will. These will keep for around 2-3 weeks in your fridge as I used mostly raw ingredients, and if you used the above measurements, 10 dates should yield around 20-25 balls, depending on the size you roll them into.
