I'll be honest- this was my first time making deviled eggs and I did run into some measurement discrepancies that resulted in my egg mixture being sort of fluid, but I've adjusted the measurements below for you to get that stiff-top egg filling. Feel free to print the recipe card attached at the end.
I'd always wanted to make deviled eggs at home and even had a bunch of recipes saved in my 'to try later' folder. Call it my laziness or forgetfulness that I waited so long to make this egg-cellent dish at home. Now that I have more time on hand and with Easter coming up, I wanted to share this easy Indian spiced deviled eggs that was far more tastier than I had imagined. I used some food coloring to dye my eggs, totally safe, easy and fun activity for your kids.

The key to getting firm deviled eggs is nice hardboiled eggs. I boiled the eggs in salted water for about 16 minutes and let them rest a minute or so before peeling. In case you did not know adding salt to the water makes the peeling process easier. When removing the egg yolks you have to be extra careful as you don't want to break the egg whites. At this stage you dip the egg whites into the colored vinegar water and the fun part begins...
There are so many filling options but the base is usually egg yolks, mayonnaise and mustard. You can mix match other spices with this base. Toppings like radish, bacon, fried onions, nachos, are the popular ones, relish and smoked paprika are my personal my favorite. However, the options are endless.
It literally took me forty minutes to make these- 16 for boiling eggs, 15 for coloring and the remaining for filling and decorating. While my eggs were getting dyed, I whipped up the egg yolk stuffing and utilized my time well. It will be faster if you skip dyeing the egg.

Curried Deviled Eggs- Easter special

Fill a saucepan with enough water to cover the eggs by 1-2 inches. Put some salt and drop the eggs in it, let it boil for a good 15-16 minutes.

In the meantime take 3 individual cups filled with water ( one cup for each color, I used three colors ). Pour in 1 tbsp of vinegar in each cup and 8-10 drops of food color in the cups.

Once the eggs are done and rested for a few more minutes, peel them carefully without breaking the egg whites. Now cut the eggs lengthwise in half. Gently remove the egg yolks in bowl. Now drop four pieces carefully in each color and let it rest for an additional 15 minutes. If after 15 minutes you feel the egg whites need to be brighter, leave them in the color for some extra time.

In a bowl take the egg yolks, add all the ingredients and mix together with a fork till smooth. If you have a piping bag, feel free use it for filling, otherwise a ziplock bag snipped at the corner works fine too.

Fill the egg yolk mixture into your colored egg white shells. Garnish with your favorite topping and serve at room temperature.
