I prefer the crackly crunch of a deep fried potato, but I'm watching those calories, so frying them in a vat of oil isn't on the menu. How about a lower calorie faux fried potato? I'll make a simple, herby fried potato in a non-existent kitchen. (We just moved and are remodeling.)

Of course, it helps to keep things simple when your cooking supplies are limited.

So potatoes were all we had for dinner, but that's okay. After all, fried potatoes are the perfect food, right?
