Ingredients:
4 pieces Bitter gourd
Oil for deep fry
For Filling:
½ teaspoon Cumin seeds
½ teaspoon Coriander seeds
1 piece dry chili
1 teaspoon Dry Mango powder (optional )
½ inch ginger
3 teaspoon poppy seed
1 tablespoon flour
Salt to taste
Preparation:
Peel off the outer skin of the bitter gourd and slice it through the middle. Remove the seeds from the inside and scoop out the flesh ¬– the white part of the bitter gourd – (however, be careful so that the outer layer remains intact) and mix it well with all the ingredients – cumin seed, coriander seed, dry chili, dry mango powder, ginger, poppy seed and salt as per given the ratio – and make a paste. Now fill the bitter gourds (after scooping it out from the inside, it will take the shape of what would look like a cupped hand!) with this paste. Then, make a batter of flour and deep fry it in white oil.
