Cool 'n Refreshing

After a long week and the return of warmer weather (at least temporarily) here in Boulder, I wanted a super summery dinner tonight.  This dinner was inspired by a grape tomato sale at Whole Foods and some leftover mozzarella in the fridge.
Egg and jam open faced sandwich (my new comfort food) with bing cherries (which looked delicious but were sadly flavorless, guess I need to wait a bit longer to get good ones), accompanied by a ginormous cucumber, tomato, mozzarella, and spinach salad sprinkled with kosher salt and topped with balsamic glaze.  Just what I was in the mood for and super refreshing!

I also tried out the grating feature on the food processor tonight with the rest of the mozzarella (mixed results so I think I'm going to try freezing my other package before grating so I get more 'string-like' pieces and hopefully that will work better), and made some rhubarb compote for yogurt topping tomorrow!
