Before you say anything, I know the title doesn't exactly make sense. I mean, what in the world is a Cannot-bake-a-holic? To be very honest, I have no idea what it means either, it just sounded... nice, somehow. lol. 
Anyway, back to my main objective of the day. My reviews on my Christmas gift from Melinda (a motivational token from them to write more reviews), thanks Mel! ;)
This is a newly launched product from Melinda's Gluten Free Goodies (MGFG) range. Apparently they were offering samples through the Coles Trial Store in Victoria before "rolling it out" nationally. So I'm quite lucky to be getting my hands on them as well all the way in Western Australia. 
At first look at the box and it's steps to make the cupcake tells me that MGFG has perhaps taken my opinion (that it will be helpful to clarify if the butter is to be melted or not, for baking dummies like moi) into consideration. lol. Seriously, I am THAT clueless when it comes to baking, and/or following instructions on a box. So, this time round for the Blueberry Lemon Cupcakes, it is clearly stated there to mix MELTED butter into the pre-mix powder. A-ha!

Was so excited about the project that I totally forgot to take pictures before putting the baking tray into the oven. But this is how it turned out. The instructions said to put between 20-25 minutes, I only put around 18 minutes and it's already browning to the extend of turning dark brown. Perhaps my temperature setting was a little high? 
Well, despite the slightly disappointing end-look of the cupcakes (my bad), it did taste yummo! Here are some pictures of my little two year old enjoying her cuppies. She was jumping up and down yelling, "good!" so I'm guessing it's good? LOL.

It was an hour after the cuppies were cooled before I had my first taste of it, and I must say I was pleasantly surprised by the taste as it wasn't as sweet as I'd expect it to be (usually the blueberry muffins I buy from the store tends to be overloaded with sugar, then again, there's nothing that's not loaded with sugar when it's sold in stores). I had to remind myself that this is not just any cupcake premix, it's MGFG, and from my previous experience with the Raspberry Coconut Cupcakes, their range of goodies are far less sweet than their peers in the supermarket. And that is exactly what I love about MGFG, they make cakes and the likes not as sinful as they are. ;)

I think overall it's been another successful baking story for someone who knows nuts about baking. Yay and a pat to myself.
