O-M-G! These Coconut and Chocolate Covered Potato Chips are so naughty and yet so addictive, that I cannot even handle this. Don’t say that they sound insane before you have tasted them. Then you know what I am talking about when you are reaching for another one.
The sweet milk chocolate meets the saltiness of the potato chips and is raised by the settle coconut. And my taste buds go crazy!
Coconut and Chocolate Covered Potato Chips make perfect Christmas pressies as well. A jar filled will naughty treats under the Christmas tree. Why not?!
Coconut and Chocolate Covered Potato Chips
Makes: Around 50-60
Preparation time: 30 – 45 min + at least 2 hours for drying
Ingredients:
75 g Ridge Cut Potato Chips
200 g Good Quality Milk Chocolate (Green & Black’s Milk Chocolate 34% Cocoa)
1/4 – 1/2 cup Sweetened Coconut Flakes
Directions:
Prepare a baking tray covered with baking paper or foil. Place a wire rack on top of it. Break the chocolate into small pieces and melt it in a heatproof bowl over boiling water taking care that the bowl does not touch the water. One by one dip the potato chips into the chocolate and place them on the wire rack the chocolate side upwards. After you have done around 1/3 of the potato chips evenly sprinkle coconut flakes on the chocolate covered potato chips on the wire rack. Continue with the next third and repeat until all the potato chips are covered with chocolate and coconut flakes. Leave to dry for at least 2 hours, preferably overnight. Store in a cool and dry place in an airtight container.
