Ingredients
2 cup finely shredded medium shredded coconut
1/2 cup almond flour
1/2 cup unpasteurized honey
2 eggs
2 tsp pure vanilla extract
Instructions
Pre-heat oven to 350 and grease a cookie sheet.
Combine the coconut and almond flour in a bowl. In a separate bowl, combine the honey, eggs and vanilla.
Add the liquid combination to the coconut and flour and mix together.
Scoop out a tablespoon full for each cookie, flattening each (makes for a prettier cookie).
Bake for about 15 minutes.
