Ours was awesome. But Max and I did it a little different this year.
I had a pretty big day at work, boo, so we did mexican food easy style.
20 minute tacos
What’s just about the easiest, most gringo way to do Mexican food??? TACOS!
We Max made 20 minute tacos. He’s one sexy beast in the kitchen, so I let him run wild for my own enjoyment.
We threw out a bag of chips and salsa for appetizers. We also cracked open some Modelo Especial, my current Mexican beer of choice.
Lime optional.
Also, Skinny Girl Margaritas were on the appetizer menu. These are my favorite margaritas!!!! If you haven’t tried them yet, DO IT!
So… how do you make 20 minute tacos? Here’s what you need.
Frozen chicken breasts, canned vegetarian refried beans, a bag of Taylor Farms Southwestern Style bagged salad, salsa of choice, taco shells, Uncle Ben’s 90 second Spanish Rice.
Heat it all up and voila!
My taco secret is to heat up the taco shells at 425 degrees for about 5 minutes. Seriously makes all the difference.
The bagged salad is the key. Taylor Farms makes a wonderful mix with parsley, romain lettuce, green onion and cabbage that is perfect for 20 minute tacos. No chopping required.
And do you know what is 9 ways of awesome about 20 minute tacos??? Just crack the taco shell in half and you have tostadas!
Unexpected options are the best.
Today
I woke up at the crack of dawn!!!!! 7:15am and I decided I’d try and be like all those other bloggers who go to the gym crazy early in the morning.
Let me tell you… early Sunday mornings at my gym are crazy! In fact I’m so shocked I might not ever go on Sunday morning again.
I was the youngest person in there. Everyone was 60+ years old. Don’t get me wrong… I’m all about people getting fit, no matter what stage of life. But don’t old people go to church??? Or sleep in? Or, I don’t know, walk around the block?
I definitely rocked it to golden girls reruns on the tv this morning on my cybex trainer.
We had family lunch at Portabello’s. I had the cuban sandwich with no cheese. It had red bell pepper, 2 kinds of pig on a roll. It was delicious and I scarfed it in 4.2 bites.
Then I spent all afternoon doing this massive list of chores…
I’m so organized and efficient!
It’s pizza on the menu tonight. I’m drooling just thinking about it.
