Christmas Roundup

Wishing everyone a fabulous festive season. May you and your families be blessed with happiness, love, fun, and lots of delicious food to eat. If you are looking for a few Christmas recipes to make over the holidays, here is a roundup of a few of my favourite traditional recipes I have made many times over the years.

SWEET AND SALTY NUTS

This is a perfect snack to serve with festive drinks. Why choose between sweet or salty nuts when you can have them both, with the added bonus of delicious spices. This Christmas Nut Mix brings all of these flavours together in perfect harmony, and you can make them in 15 minutes or less.

CHOCOLATE AND VANILLA LAYER CAKE WITH CINNAMON BUTTERCREAM

This cake has delicious layers of dark chocolate and vanilla and sandwiched together with cinnamon buttercream. For a natural Festive cake use linen or burlap to decorate the cake. Use pine cones and foraged leaves to add a touch of freshness.

CHRISTMAS CAKE TRAY BAKE

Fruity, light and and spicy and made in a tray, this simple cake is perfect for a "quick night before, forgot to make a Christmas Cake", kind of cake. It has a small amount of fruit mince with candied ginger, citrus peel and banana to lighten it.

SPICED CHRISTMAS FRUIT SALAD

This fruit salad is fresh and spicy . It is rich in vitamins and low in fat, and delicious at the same time, so you won't feel like you are missing out on any of the good stuff. It is best made the day before so that the flavours can infuse.

CRINKLE COOKIES

These decadent chocolate crinkle cookies look like a festive chocolate brownie with a coating of fine powdered snow. This is one cookie you must bake this Christmas, believe me you will be thanking me..... unless you are on a crazy diet, which nobody should be considering at this time of the year. They are beautifully soft on the inside and chewy on the outside, will more than satisfy the chocolate craving, and best of all taste insanely delicious.

MY TRADITIONAL FAMILY FRUIT MINCE CAKE

We all have our favourite Christmas Cake recipe, this is mine that belonged to my mother, and probably her mother before that. I have been making it for as long as I can remember, and its foolproof. Traditional heavy Fruit cakes do require a bit of time in the making, so prepare for a morning in the kitchen.

TRADITIONAL MINCE PIES

Deliciously flaky pastry filled with a generous amount of fruit mince make these a family favourite. They are great served warm as a tea time treat.

SIMPLE AND QUICK CHRISTMAS CAKE

When I tell you this Christmas cake is simple to make, I mean super duper simple. It takes minutes to put together, doesn't need to be made in advance or soaked in brandy, and is deliciously soft and moist. You can make this Christmas Cake the day you need it, and can serve it for afternoon tea. It doesn't need any cover ups of marzipan, fondant icing or any fancy topping.

HAPPY HOLIDAYS EVERYONE
