Chocolate Filled Cupcake Recipe (using Cake Secret) ~ Cooking

I recently purchased a 'Cake Secret' style cupcake tray from the reduced section in Store Twenty One, and I thought I would share with you what I did to make these cakes. The recipe I followed was the Victoria sponge cake from the BeRo baking book, which is the recipe I have always used, and probably always will use. I thought you would like to see how I used it!
Ingredients


Chocolate Filled Cupcake Recipe (using Cake Secret) ~ Cooking

  • 6oz/170g Caster sugar
  • 6oz/170g Margarine 
  • 6oz/170g Self raising flour
  • 3 Eggs
  • Small chocolate pieces (I used 'Bitsa Wispa')
  • A muffin tray lined with cupcake liners or the Cake Secret like I used
  • Medium sized bowl
  • Mixing spoon or electric whisk
Method
Firstly, you need to set the oven to gas mark 4. ( Convertion to other temperatures found here) Put the margarine and sugar into a bowl and mix until light and fluffy.

Next, add the eggs one at a time adding a little flour with each. Once eggs are combined, fold in the remaining flour. Folding adds air to the mixture to help it rise in the oven.

Once the flour is fully combined, you want to spoon the mixture into the tray. If you're using the cake secret tray like I am, you want to slowly put a small chocolate, in my case, Wispa, onto the spokes in the middle of each circle where the cake mix would go. If you're just using normal cake cases, add one spoonful of cake mix, add a chocolate and press it down into the mix slightly, then add another spoonful of cake mix over the top to cover the chocolate.

As you can see, there are two smaller circles in the middle of the tray. Fill these up with water as they make your cakes more moist. Put them in the oven for 20-25 minutes.

Once they've been cooked, leave them to cool for a little bit, then take them out of the tray. I cut one in half so you could see what they look like, however I think they could've been better with 2 chocolates in each one instead of just one. Feel free to experiment with different kinds of chocolate like rolos or mini twix's.
