When little ones are at home, we all know the drill. Well not, really. I was missing the “me-time” with Little A since he started nursery. Though we’d spend the evenings together , I always felt a part of us working on crafts, playing games, learning nonchalant lost somewhere. Can’t get over separation anxiety, ah?!  So while we got two months of summer break in hand, we got along like a house on fire and are still doing so! We are grateful for our time that we spend in doing numerous activities, one day at a time. Thankfully, I have some super loving neighbors. The boys play in the corridor for hours and we are obliged of others’ who don’t mind the screaming and running at all (we know how loud boys can be!). We have few of Little A friend’s come in for play-dates to spend a day. We swim in our rooftop pool few times a week. And sometimes I allow him to get bored for he comes out with intelligent ways when he is spending the time by himself. Though he is a boy, it isn’t difficult to get him into the kitchen. He is rather more excited to bake cookies or make his own breakfast if given a choice.

Somewhere in Ramadan, we decided to have an impromptu baking session with anything that was available in the pantry. And then we came up with these cookies loaded with chunks of chocolate. Don’t worry, we gave it a healthier twist by adding oats to compensate for the guilt! It is extremely easy to get kids involved in the kitchen when cookies are involved; for they are straightforward to make and simple to knead and shape. So if you’ve got a few hours to spare and are wondering how to entertain children at home, you know what you have to do. It may get messy if they decide to get naughty, however, it is easier to turn a blind eye  to that layer of flour on the floor for the sweetest smile on their faces.

Everyone has their own favorite when it comes to chocolate cookies. Mine is to overload them not with chocolate chips but lumps of chocolate from a bar to make them chewy and oozing with chocolate. There is nothing like too much chocolate, right?

Chocolate Chunk Oatmeal Cookies

  • Servings: 12 cookies

Ingredients:
  • All purpose flour – 1 cup
  • Quick rolling oats flour – 1 cup,
  • Eggs – 1, large
  • Egg yolk – 1
  • Unsalted butter – 3/4 cup, melted
  • Cornstarch – 1 tsp
  • White granulated sugar – 3 tbsp
  • Brown sugar – 1/2 cup
  • Baking soda – 1 tsp
  • Salt – 1/4 tsp
  • Vanilla essence – 2 tsps
  • Chocolate chunks – 1 cup

Method:

Mix together flour, oats, baking soda, cornstarch and salt in a bowl and set aside. In a standing mixer with paddle attachment, whisk melted butter and the sugars (both brown and white) until no lumps remain. Add in egg, the yolk and vanilla. Beat at medium speed until all incorporated. Add the dry ingredients and mix with a gentle hand till it comes together. Do not over mix the cookie batter. Cover with a cling film and refrigerate for 30 minutes min. as this wont let the cookies spread much. Preheat oven to 180 Degrees C and line the baking sheets with parchment paper. Scoop out a tbsp from the cookie batter and make balls. Place balls on the prepared baking sheet, without flattening them. Bake the cookies for 10 minutes. Cool completely on the wire rack before serving or storing in an air tight container.
