I first came across coffee in chilli when I watched Jamie Oliver's American series and (of course) I bought the book to accompany the series! However last year I bought Felicity Cloake's perfect host book and she had a delicious recipe for pulled pork chilli with coffee and bourbon. I didn't honest believe the bourbon, which is added at the end, would make much of a difference. But I can assure you it does. This is my version of chilli beef with bourbon and coffee.

You'll need:

500g minced steak or stewing steak
2 onions
2 red or yellow peppers, deseeded and sliced
2 small courgettes
3 cloves garlic, crushed
2-3 red chillis
2 tbsp dark brown sugar
2 tsp ground cumin
2 tsp smoked sweet paprika
1 tbsp cider vinegar
1 tin chickpeas, drained
1 tin red kidney beans, drained
200ml coffee
A dash of bourbon

♡ In a saucepan suitable for the oven, heat a little oil and fry off your beef. Add the diced onion, red chillis and garlic. Fry for fiv3 minutes until the oniins havr softened.
♡ Add the peppers and courgettes and stir well. Next add the cumin and paprika and give a good stir.
♡ Once the spices are thoroughly combined add the vinegar, sugar and coffee. Tip in the chickpeas and kidney beans (you can use any any beans you like really).
♡ Preheat your oven to 150° and place the chilli, with a lid on, into the oven for about 4 hours. The meat should be tender and falling apart.
♡ Serve with some rice, soft tortillas and avacado salsa. Divine ♡
