Cheesy Stuffed Meatballs
WARNING! The cheese you see in the picture is exactly what it looks like in person! It is rare that my husband and I have a dish that we both like that we both enjoy having for dinner. Hey, I am just stating facts. I love spicy, he likes bland, he likes burnt brussels sprouts, I don't, I love Mexican.. he.. gasp.. hates Mexican. But these little cheesy babies.. they are loved by both of us. This is a delicious treat you don't even have to feel guilty about eating. I use 93% ground beef for almost everything ( if you can find leaner feel free to use it.) And for the amazing cheesy center... just 1/4 of a reduced fat mozzarella string cheese! Score! I always mix and roll these the night before that way I can pop them in the oven when I am ready( no frying needed.) The best part? The cheese that melts out and sticks to the pan. This crispy cheesy amazingness by far is the best part of these meatballs. Serve with tomato sauce or if you can't wait eat them from the sheet pan. No shame. I have done it.

Cheesy Stuffed Meatballs

Makes 12 meatballsIngredients: 

1 lb 93% ( or your fav) ground beef1/4 cup whole wheat Italian bread crumbs2 tablespoons Parmesan cheese1 egg2 cloves of garlic choppedsalt & pepper to taste3 low fat mozzarella sticks ( each cut into 4 pieces)olive oil to drizzleDirections:1. Preheat oven to 350F. Chop garlic and add it to a large bowl. 2.Add remaining ingredients except mozzarella to the bowl and mix well ( don't overmix) 3. Drizzle olive oil on a sheet pan. Roll each meatball in between your hands and lay on sheet pan. Take each mozzarella piece and stick one in the center of each meatball and cover with remaining meat so cheese is no longer showing. 4. Bake for 20 minutes or until golden brown ( cheese should be melting out of meatballs.)
