Finished in a cut-down Oloroso Sherry cask (33 gallons) to give it more surface area. This specially made small sherry cask finished the whiskey in this bottle for at least a year before getting cut down to 46% and bottled. Though, thankfully, without any chill filtration... and I think that's the key to Irish Whiskey.
From drinking so many high-quality Irish Whiskeys this month I've come to the conclusion that while cask strength is great, it's not the key to showcasing the true beauty of Irish Whiskey. Minimal filtration is. All the Irish Whiskeys that have been NCF, even if at lower proofs, have shown great beauty and depth.
Reading about the process and seeing the NCF got me excited about this one. So let's stop delaying and dig into this Irish Whiskey review.

Celtic Cask Fiche a Seacht was double distilled at the Cooley distillery and first matured in fresh bourbon barrels for 18 years. Part of this cask was then re-casked in a specially commissioned 125 litre Oloroso Sherry cask for 1 year. Limited to 206 bottles.

NOSE
Juicy red fruit, Red Vines, spice, toffee, hazelnuts, dried strawberries, brown sugar, and light notes of olde candy, leather and vanilla taffy.
PALATE
Juicy red fruit, leather, nutmeg, Red Vines, toffee, nuts, malt, brown sugar, X-mas spice and a touch of buttery brittle.
FINISH
Long -> Juicy red fruit, malt, cocoa, ash, citrus, spice and oak.
BALANCE, BODY & FEEL
Great balance, full body and a soft velvety feel.
Celtic Cask 27 Fiche a Seacht Review: Overall and Score
Yum. Juicy red fruit with deep sherry undertones galore. Balanced and oily this is a whiskey that's sweet and bright while carrying some dark heavy undertones that bring balance and complexity. It's bold it's heavy and it's delicious.
The aroma is silken red fruit threaded with dark tones of toffee, nuts and brown sugar. The palate is a deeper delivery of the same with a bolder spice presence moving through it all from front to back palate. The finish fades out to a nice sweet and oaky note.
Celtic Cask 27 Fiche a Seacht is a fantastic whiskey and words like pleasant feel like an insult, If it wasn't so dang expensive, even before shipping from Ireland, I'd be grabbing a whole lot more of it. Great stuff... just great.
