Who said eating well has to be suck? When I’m trying to shed some extra pounds, there’s one rule I live by…no boring food is coming out of my kitchen! For me, it’s impossible to eat healthy if I feel like I’m somehow depriving myself. Boiled chicken and steamed veggies? No thanks, I need flavor in my life! These spicy baked sweet potato wedges help me feel good about what I’m eating, and satisfy my craving for my main weakness, french fries! You won’t miss the frying with these, because the Cajun flavor makes them finger-lickingly delish!
1 pound sweet potatoes, washed and scrubbed clean1 1/4 teaspoons Cajun seasoning
1 tablespoon fresh thyme
1 1/2 tablespoons olive oil
Preheat your oven to 450 degrees F.
Cut your sweet potatoes into large wedges. I do this by cutting them in half lengthwise, and then cutting each half into 3-4 wedges, depending on the size of the sweet potato.
Season the wedges with the chopped thyme, 1 teaspoon of Cajun seasoning, and 1 1/2 tablespoons of olive oil. Reserve the 1/4 teaspoon of Cajun seasoning.
Arrange the sweet potato wedges in a single layer on baking sheet lined with parchment paper.
Bake the sweet potato wedges for 15 minutes and then turn them with a spatula. Bake for another 5 to 10 minutes, until lightly browned and tender on the inside. When they’re done, sprinkle the wedges the remaining 1/4 teaspoon of Cajun seasoning, and serve hot.
