Brioche French Toast with Hickory Smoked Bacon and Maple Syrup

Now this is a treat! My husband ordered it when we had breakfast out recently and raved about it. In fact he’s been badgering me to make it since. It’s certainly not the healthiest of breakfasts, but once in a while a treat like this is nice. Its really easy to make and if you had friends staying it would be an ideal show-stopping breakfast. All you need to buy some really nice hickory smoked bacon and some sliced brioche and your almost there. It has to be hickory smoked bacon otherwise you won’t get the same effect.

Begin by frying off your bacon, remove from the pan and pat with a little kitchen paper. You can place in a low oven to keep warm until the brioche is ready. Not too warm or the bacon will go hard.

Crack a couple of eggs into a flat bottomed dish and add a small splash of milk and a generous splash of maple syrup, mix well with a fork. Put a frying pan on to heat with a little flavourless oil and a small knob of butter. Place a slice or two (if they fit) of brioche into the egg mixture and leave for about 30 seconds. Turn over and allow the egg mixture to soak in on the other side. Once the butter has melted in the frying pan add your brioche slices and frying until golden brown. Flip over and repeat on the other side.

Place the first slice on a plate and drizzle a small amount of maple syrup on top. Place the second slice of brioche on top and dust with icing sugar. Place a couple of slices of bacon on top and enjoy.
