Blueberry Pancakes with Chocolate Chunks and Black Berry Compote

Good morning friends! I miss working out in the mornings. I’ve been itching to run in the crisp-fresh air.

I slept a little late this morning. I woke up to a text message on my phone and it was 8:40am! Holy Moses, the morning is half over. Last night I paid a little visit to the snacking fairy so I wasn’t awoke by out of control hunger.

So after doing some blog reading while waiting for an inkling of hunger, I had a serious hankering for some pancakes.



I found my Hungry Jack pancake mix and added 1/2 cup mix to a scant 1/2 cup water in a small bowl.

What is the best use for slightly shrivly blueberries? Baking with them! So I added all my shriveled berries to the batter.



I also had a package of blackberries that were on their last breath so I added them to a saucepan with two TBSP granulated sugar. I mashed the berries and cooked them down until thick and syrupy.


Some chocolate chips magically made their way into my pancakes… I wonder how that happened?

Today is going to be, again, a little low key. I have a few errands to run and some cleaning to do. Dorothy and I have a running date at 4:15 and I have a summer basketball game to coach at 6pm.

I guess it’s good to be busy while Max is gone in Hawaii! He told me last night on the phone that he arranged for my birthday present to come in the mail while he’s gone so that I won’t be sad the entire time. Such a good boyfriend. I can’t wait to see what it is!
