Birthday Cocktails

My friend turned 30 at the weekend and I made some cocktails for her party. Naturally we forgot something important, pitchers to mix the cocktails in, but we improvised and served these as shots. Which was probably a good thing!

First up is, The Hurricane, a rum cocktail originating from New Orleans during the 40′s when rum was in abundance. So called because it was served in hurricane lamp shaped glasses. You’ll need passion fruit syrup which I’ve no doubt can be bought online but I made mine.

2 oz dark rum
1 oz passion fruit syrup
1 oz freshly squeezed lemon juice

Combine all ingredients in a cocktail shaker with some ice cubes and shake well, serve over ice.

To make the passion fruit syrup you’ll need:
3 cups of passion fruit pulp (about 15 passion fruits)
2 cups of sugar
1 cup of water

Dissolve the sugar and water over a medium heat. Once dissolved add the passionfruit pulp. Simmer for 5-10 minutes. Remove from the heat and strain out the seeds. Bottle in a sterilised container until needed.

Next up is the classic margarita. Again we served these as shots. Remember to salt the rims of the glasses, we didn’t! 
You’ll need:
1 oz cointreau or triple sec
1 oz fresh lime juice
2 oz tequila

Combine all three ingredients in a shaker with a few ice cubes and shake well. Strain into a glass that has been salted with salt.

The measurements I’ve given here are for one regular sized cocktail, you can obviously make more by increasing the quantites and keeping the same ratios.
