These Berry and Cream Parfaits are inspired by fresas con crema (strawberries with cream), a very common Latin dessert. I first discovered this delectable dessert at my local Colombian restaurant. Typically, sliced strawberries are drizzled with sweetened condensed milk and topped with sweet whipped cream. It's as delicious and sinful as it sounds. I have yet to eat something that isn't absolutely delicious when drizzled with sweetened condensed milk. Cereal, ice cream, pound cake, fruit, my fingers...anything goes!
My berry and cream parfaits are a nod to this treat, I liven up the recipe by adding a mix of berries and presenting the dessert in a martini glass. This dessert is a perfect treat whether you're serving one, or a crowd. The show-stopping presentation will definitely wow your guests.
Makes 4 parfaits2 cups cold heavy cream
2/3 cup sweetened condensed milk
1 teaspoon vanilla extract
5 cups fresh mixed berries
Whip the heavy cream until it starts to get fluffy. Add 1/3 cup of sweetened condensed milk and vanilla extract.
Whip the cream until it reaches stiff peaks, then set aside.
Layer berries, condensed, and sweetened whipped cream into a martini glass.
Drizzle the top of the parfait with a little extra sweetened condensed milk, then serve immediately.
